Delicious Honey Cakes Inspired by Winnie the Pooh
These honey cakes are easy to make and they are actually sort of a puffed pancake baked in a muffin tin. They don’t have any sugar in the batter – the sweetness comes from the vanilla ice cream and the honey drizzle. They are sweet and satisfying without being overly rich. It’s a very simple dessert that looks very pretty plated which is nice if you’re into presentations but don’t have the patience to do a lot of food staging.

Ingredients
- 3 eggs
- 1/2 cup flour
- 1/2 cup milk
- 1/4 teaspoon salt
- Vanilla ice cream
- Honey
Instructions
Preheat oven to 400 and grease a muffin pan with nonstick cooking spray. Set aside.
In a large bowl, whisk eggs until combined. Add flour, milk and salt and whisk well until combined and no longer lumpy. Pour into prepared baking dish, filling about half way.
Bake for 20-25 minutes or until puffy and well browned.
Remove from oven and let set as cakes will fall. Serve warm with vanilla ice cream topped with honey.
