Toffee Graham Cracker Cookies

I am not really a baker, y'all. I love cooking and creating new recipes but baking requires a level of patience that I'm usually lacking. I do have a sweet tooth, though, and my family likes having dessert a couple of times a week, so these toffee graham cracker cookies are a great “meet in the middle” solution.

I'm not sure where the recipe came from. I found it while I was cleaning out one of my kitchen drawers in preparation for a move, written on a sheet of notebook paper. It might have been something I copied from a magazine or it might have been something I brought home from a cookie exchange once upon a time. Wherever and whoever they came from, they're amazing. And easy.

The 1 and 1/2 packages of graham crackers in the ingredients refers to the individual packages (AKA plastic sleeves) of graham crackers, not the boxes. Amazon makes a great graham cracker, btw

This recipe calls for 

1 cup pecans, coarsely chopped.

You could also use walnuts, although I've never tried them. I think they'd be great.

The first time I made this recipe, I used salted butter. I've started buying unsalted butter in bulk at Costco, so if you're missing that saltier taste, you can always add a little sea salt or coarse ground salt. We've done that a couple of times and it's pretty yummy.

Toffee Graham Cracker Cookies
Makes about 24 squares

These easy toffee graham cracker squares just might just be your new favorite treat!

Toffee Graham Cracker Cookies

Yummy, crisp, nutty and best of all, ridiculously easy.

  • 1-1/2 packages graham crackers (not boxes, the plastic sleeves)
  • 2 sticks butter
  • 1/2 cup sugar
  • 1 cup pecans (coarsely chopped)
  1. Preheat oven to 350 and line a 10x15x1 baking sheet with aluminum foil.
  2. Line graham crackers onto the pan as best as you can, breaking crackers as necessary to fill the pan.
  3. In a small saucepan, add butter and sugar and heat on medium low heat, stirring constantly until sugar is dissolved and mixture begins to boil.
  4. Remove from heat and pour onto graham crackers in prepared pan. Spread evenly with the back of a spoon.
  5. Sprinkle pecans on top.
  6. Bake for 10-12 minutes. Mixture will be bubbly.
  7. Remove from oven and let cool completely before removing foil and cutting into squares.
  8. Makes about 24 squares

    1. I have not ever tried that but I think I will next time we make these. Based on what I know about sugars, I don’t see why this wouldn’t work.

    2. Have made these for years and have always used Brown sugar. Also in hard times used 1 stick unsalted butter and 1 stick Margarine.

  1. This sounds like a great recipe and I think I’ll try it. However, it was very difficult to even read your blog because of all the ads. Your pictures of how to make were great but you stopped telling how to make it at the picture of the butter. I realize the ads help pay you, but sometimes I won’t even finish reading someone’s blog because the ads are so annoying. I did finally scroll to the end.

    1. Thank you for that feedback, Patricia. The ads help keep the lights on around here but I appreciate you being honest about the user experience and I’ll take a look to see if there’s something I can do to to make it better. I did make a little edit that directs you to the very end of the page for the recipe card and I’ll go back in and try to edit that with in-process photos when I get a minute next week. Maybe that will make being on the page a little easier. Enjoy the recipe – it’s one of our faves.

  2. I’m going to try these, use brown sugar, and sprinkle with chocolate chips when I take it out of the oven, can’t wait!

      1. Adding a package of semisweet chocolate chips after taking the tray from the oven, letting them melt and spreading the chocolate evenly over the crackers, is called Christmas Crack around here. At that point, you could also sprinkle on candy sprinkles!

        1. I make these in fall all the time, sometimes I will add peanut butter and chocolate chips. Put them on and stick back in the oven for 1-2 min. Spreed the chips mix, the chocolate some how rises to the top, you get a two layer effect!

  4. i have a TON of graham crackers i need to use up. most of them are all broken, i was kind of looking for something that used crushed graham but this sounds so good and easy im gonna try it and see what happens, Thank you!!!

    1. Let me know how it goes – I never thought of using broken pieces. I just cleaned out my pantry and there were tons of broken and stale graham crackers from camping and I threw them out. I never thought about using them for this.

  5. Have made these for years and they are delicious! These are part of the holiday tray my husband takes to work and they’re always the first gone. My MIL’s recipe called for 7 minutes in the oven, but I think the 10-12 minutes would give me the crispness I think they need.

    1. I haven’t done it in this recipe, but in general, you can sub brown sugar for white sugar 1:1. It can change the texture of baked goods sometimes but I think for this, that wouldn’t really matter and might add a delicious flavor. Try it!
